chore(redis): finish low-severity mock, upsert_hash and config hardening - #562

Cluster mixins call cluster methods by capability instead of an isinstance check, so RedisMock and AsyncRedisMock answer cluster info, nodes, slots and the CRC16 key slot. Mock cluster_nodes returns a real topology dict. Adds mock cluster Behave scenarios and a docs note.
