chore(examples): update dependencies that pull older 'esbuild' versions - #12505
Update the example dependencies that still resolve older esbuild versions.
examples/lit/ssr: update tsx from ^4.19.0 to ^4.23.15. tsx@4.21.0 (and the optional peers resolved to it) is replaced by tsx@4.23.15, which removes esbuild@0.27.7 from the lockfile.
examples/solid/solid-start-streaming: migrate from SolidStart 1 (vinxi) to SolidStart 2, matching the other *-solid-start2 examples.
Replace app.config.ts with vite.config.ts (solidStart() + nitro()).
Update @solidjs/start to ^2.1.0 and @solidjs/router to ^1.0.0, drop vinxi and engines, add nitro, typescript and vite dev dependencies.
Switch scripts to vite dev / vite build / node .output/server/index.mjs and add test:types.
Drop vinxi/client from tsconfig.json types and enable skipLibCheck.
Align README.md and .gitignore with the other SolidStart 2 examples.
